Summer may be more than halfway over, but the running joke here in the Pacific Northwest is that it's just getting started! To take advantage of the sunshine, we hit the great outdoors, whether it's heading to the trailheads or spending a weekend around the campfire with friends and family. One of my favorite recipes from the eBook is a quick and simple take on the banana boat. Bananas are full of potassium which help stave off cramps and provide a healthy energy boost, making them a great fuel source for hitting the trails. Simply top the banana with peanut butter and a handful of Endurance Granola for a protein packed crunch. These are great for a quick breakfast or nutritious snack any time of the day.
- 1 banana
- 2 Tbsp of peanut butter (or substitute almond/ cashew butter)
- Handful of Ultra Protein Endurance Crunch™ Granola
- Slice banana in half, lengthwise.
- Spread peanut butter onto banana and top with granola.
